In 2022 I was diagnosed with coeliac disease, which called for a massive lifestyle adjustment. As an avid baker I was worried - even more so after trying a few extremely disappointing gluten free supermarket cookies.

Getting my confidence back in the kitchen required: re-learning previously straightforward techniques; experimenting with different replacement flours; a lot of practice (and taste testing!); replacing all my wooden/plastic/silicone kitchen items, convection oven, and knife-scored countertops; patience; and courage.

I call these precautions "being my own health goalie".

I have never been glutened from my own kitchen and wish to extend the same care to everyone who enjoys these products. Thank you for your support!
